Carrot Bread

1 cup of vegetable oil or margarine
4 eggs
2 teaspoons of vanilla
2 cups of grated carrots
3 cups of flour
2 cups of sugar
4 teaspoons of baking powder
1/2 teaspoon of soda
1/2 teaspoon of salt
2 cups of chopped pecans

 

Beat eggs, add oil, vanilla and carrots. Combine flour, sugar, baking powder, soda, salt and nuts. Add to egg mixture and blend well. Pour into 2 greased and floured loaf pans. Bake at 350ºF.  for 1 hour to 1 hour 10 minutes, or until done. Cool in pan for 10 minutes.
