Cranberry Muffins

2 cups of all purpose flour
1/2 cup of sugar
1 tablespoon of baking powder
1/2 teaspoon of salt
1 cup of milk
1/4 cup of salad oil
1 beaten egg
1 cup of cranberries
1/2 cup of chopped nuts
2 teaspoons of grated orange peel
2 tablespoons of sugar
1 teaspoon of ground cinnamon
1 teaspoon of grated orange peel




Combine the first 4 ingredients. Stir in milk, salad oil and egg just until blended. Fold in cranberries, chopped nuts and 2 teaspoons of orange peel. Spoon into greased muffin tins. Combine 2 tablespoons of sugar, ground cinnamon and 1 teaspoon of orange peel. Sprinkle over muffin batter. Bake at 400ºF. for 20 to 25 minutes or until cake tester inserted in center comes out clean. Yield 1 dozen
