Kentucky Beaten Biscuits
4 cups of sifted flour
1 teaspoon of salt
2 tablespoons of sugar
1 teaspoon of baking powder
1 cup of lard or vegetable shortening
1 cup of cold milk
1/4 cup of ice water
Sift the flour, salt, sugar and baking powder together in
a mixing bowl, then cut in lard until of meal consistency. Mix the milk
and water together, then pour all at once into flour mixture, stirring
to make a stiff dough. Turn out onto a floured board and knead for about
5 minutes. Roll through a biscuit kneader , folding each time, for about
25 times or until dough pops and is soft and velvety.
Keep well floured with additional flour to prevent sticking. Roll out
1/4 to 1/2 inch thick, then cut with small biscuit cutter. Place on a
baking sheet. Prick through the dough with a fork. Bake at 350ºF. for
about 40 minutes. dough may be beaten with heavy rolling pin and worked
to smooth waxy consistency that pops if biscuit kneader is not
available. |
