4 to 5 cups of all purpose flour, divided 2 packages of dry yeast 3/4 cup of milk 1 cup of water 2 tablespoons of shortening 2 tablespoons of sugar 2 teaspoons of salt 1 egg melted butter, optional
Into a large mixing bowl, measure 2 cups of flour, add yeast and mix. In a small saucepan, mix milk, water, shortening, sugar and salt, heat until warm (120º to 130ºF.) Pour into the flour yeast mixture. Add egg and mix well. Gradually stir in enough of the remaining flour to form a soft dough. Knead 5 to 10 minutes, until mixture is smooth. Cover dough and let rise 20 minutes. Divide dough into 4 equal parts. Shape into small loaves. Place in four 3 x 5 x 2 inch pans. Let rise until double in bulk, about 45 minutes. Bake 25 to 35 minutes in a preheated 400ºF.) oven. Remove from pans, and cool on racks. Brush with butter for soft crust, if desired. Makes 4 mini loaves |
