| | Ordinary Coriander & Ginger Loaf
1/4 cup of warm water 1 package of active dry yeast 1/4 cup of sugar 1 cup of warm low fat milk 1/4 teaspoon of coriander 1/2 teaspoon of cinnamon 1/2 teaspoon of ginger 1/4 teaspoon of cloves 1/4 teaspoon of mace 1/4 cup of canola oil 1/4 cup of chopped, peeled orange 1 lightly beaten egg 3 1/2 cups or more of unbleached flour
In a measuring cup dissolve the yeast in warm water. Add sugar and let bubble. Set aside. In a large mixing bowl combine the remaining ingredients. Add the yeast mixture and stir to form a dough. Turn dough onto a floured board and knead, adding more flour until the dough is smooth, not sticky. Place the dough in a warm, greased bowl. Cover the bowl with a towel and let the dough rise until doubled in bulk. Preheat the oven to 375ºF. Punch the dough down. Shape it into a loaf and place it in a greased 9 x 5 inch loaf pan. Bake the bread for 45 to 50 minutes or until golden brown. |
