Sourdough Potato Bread 2

2 packages of active dry yeast
12 cups of flour
2 cups of mashed potatoes
1/2 cup of margarine
4 eggs plus 1 egg yolk
1 egg white mixed with 2 tbsp. water
1/2 cup of sugar 5 tsp. salt
1 1/2 cup of milk
1/2 cup of water
2 cups of sourdough starter
Sesame or poppy seeds

In a large bowl, combine the yeast, flour, sugar and salt. In a saucepan, cook potatoes and mash, stir in milk, water and starter. Then add the eggs and beat with mixer for 2 minutes. Add to flour mixture and knead until the dough is medium stiff. Place in greased bowl and let rise for 2 hours. Separate dough into 12 balls. Roll each ball into a rope 12 inches long. Pinch 3 ropes together and braid loosely. Complete other 3 loaves. Let rise until double, glaze with egg white wash and sprinkle with seeds. Bake at 350ºF. for 30 to 35 minutes.
