Quick Sourdough Bread

1/3 cup of sugar
3 tablespoons of instant potato flakes
2 1/2 cups of  warm water
2 packages of rapid rise yeast
1 teaspoon of salt
1/2 cup of shortening
6 cups of bread flour

Grease a large bowl. In another bowl, mix all ingredients and make a stiff batter. Place dough in greased bowl and brush some oil on the top of the dough. Cover with cloth and let sit in a warm place until it doubles. Do not refrigerate. Push dough down and knead well. Divide into 3 or 4 loaves. Place in greased pans. Oil top of each loaf. Cover and let rise until just about double. Bake at 300ºF. for 35 to 40 minutes. Bread will sound hollow when done. Remove from pans, brush with butter or margarine and let cool on a wire rack.
