| Unleavened Bread 3 Makes 1 loaf
1 2/3 cups of warm water 4 cups of whole wheat bread
Pour the water into a large bowl. Add 3 cups of flour. Stir. Add the last cup of flour gradually stirring until the batter is too stiff to stir. Knead in the remaining amount of flour. Knead for about 20 minutes, until the water and flour are mixed well. Shape into a loaf as you knead. Oil a small loaf pan. Place the loaf in the pan. Cover with a damp towel and let rise in a warm place for 24 hours. In the summer rising time is less, depending on the temperature. The towel should be kept damp throughout the rising time. Bake for 1 1hour at 350ºF. The crust will be chewy and hard. If the bread did not rise to the top of the loaf pan, bake for 30 minutes at 250ºF. and then 350ºF. until the crust is hard. Cool on a rack. |
