Eight Layer Casserole

1 cup of uncooked rice
1 cup of canned or frozen whole kernel corn
1 cu of canned green beans, drained Basic-Recipes.com9/13/06
salt and pepper to taste
2 small cans of tomato sauce
1/2 cup of finely chopped onion
1/2 cup of finely chopped green pepper
1 pound of ground beef
4 slices of bacon, cut in half

 


Place a layer of each rice, corn and green beans in baking dish. Sprinkle with salt and pepper. Pour 1 can of tomato sauce and 1/2 can of water over layers. Add onion, green pepper and ground beef; sprinkle with salt and pepper. Pour the remaining tomato sauce over and 1/2 cup of water over beef. Cover meat with bacon. Cover tightly and bake at 350ºF. for 1 hour. Uncover and bake about 30 minutes or until the bacon is crisp. Makes 4 - 6 servings
