Baked Chicken Casserole

one 2  1/2 - 3 pound broiler fryer, cut up
1/2 cup of melted butter
1 can of condensed cream of mushroom soup
2 tablespoons of dry sherry Basic-Recipes.com9/13/06
freshly ground black pepper to taste
1 tablespoon of minced parsley



Arrange the chicken in a single layer, skin side down, in a shallow 2 quart casserole. Sprinkle butter over. Bake in 400ºF. oven for 20 minutes. Turn the pieces over and bake for 20 minutes longer. Mix soup with sherry and flavor with pepper. Pour over chicken. Sprinkle with parsley. Bake for 20 minutes longer. Serves 4
