Cauliflower Casserole

 

Cauliflower Casserole

1 large cauliflower, cut into flowerets
5 tablespoons of butter
5 tablespoons of flour
2 1/2 cups of milk
6 tablespoons of grated Gruyere cheese
salt and freshly ground black pepper to taste
2 tablespoons of dry bread crumbs
2 tablespoons of melted butter

Cook the cauliflower in boiling, salted water to cover for about 10 minutes Drain. Melt butter and stir in flour smoothly. Add milk and cook stirring constantly, until thickened. Add 4 tablespoons of the cheese and stir until it is thoroughly absorbed by the sauce. Season. Pour in enough of the sauce to coat the bottom of a 2 quart casserole. Place cauliflower over this and pour the rest of the sauce over. Mix remaining cheese with the bread crumbs and sprinkle on top. Sprinkle melted butter over. Bake in 375ºF. oven until nicely brown, about 30 minutes. Serves 4 - 6
