one 3 pound broiler fryer, cut into serving pieces 3 tablespoons of butter 1 tablespoon of cooking oil 2 medium onions, sliced thin 1 clove garlic, mashed 1 cup of peas 3 medium tomatoes, quartered 3/4 cup of rice 1 teaspoon of salt Freshly ground pepper 1/2 teaspoon of thyme 2 cups of chicken broth
Brown the chicken pieces in hot butter and oil until golden on all sides. Remove to a 3 quart casserole. Fry the onion and garlic until golden. Add to chicken pieces with peas, tomatoes, rice and seasonings. Pour broth over. Cover and bake in 350ºF. oven until chicken is done, about 1 hour. Serves 4
02072009 - Hey Basic-Recipes.com I made this yesterday, I used boneless skinless chicken breast and cut it up, it took a bit longer to cook than the hour listed. It was a bit bland for my taste, but I added some Mrs. Dash and hot sauce, it was great. I will make it again. Nicole S. Douglasville, Ga
