| Chicken with Grapefruit
3 tablespoons of butter or chicken fat 1 cup of sliced fresh mushrooms 2 tablespoons of chopped onion 5 tablespoons of flour 3/4 cup of chicken stock 3/4 cup of milk 3/4 teaspoon of salt freshly ground pepper to taste 2 eggs, slightly beaten 1 1/2 cups of diced cooked chicken 3/4 cup of diced cooked ham 1 cup of grapefruit sections, cut in pieces 1/4 cup of sliced stuffed olives 1/2 cup of grated Parmesan cheese |

Melt the butter or chicken fat in a 2 1/2 - 3 quart casserole and brown mushrooms and onion in oil. Blend in flour. Gradually add stock and milk and cook over low heat, stirring constantly, until thickened. Add salt and pepper. Combine the mixture with eggs and cook for 2 minutes longer, stirring constantly. Remove from heat and add chicken, ham, grapefruit sections, and olives. Mix well. Sprinkle top with cheese and bake in 350ºF. oven until brown on top, about 20 - 25 minutes. Serves 4 |
