Ham & Egg Casserole

 

Ham & Egg Casserole

1/4 cup of butter
2 tablespoons of flour
1 tablespoon of dry mustard
2 cups of light cream
1/2 teaspoon of sugar
1 teaspoon of prepared Dijon mustard
1/2 teaspoon of salt
1 egg yolk
1 tablespoon of minced fresh dill or 1 1/2 teaspoons of dried
2 cups of diced cooked ham
4 hard cooked eggs, quartered



Melt butter and stir in flour and dry mustard smoothly. Add cream and cook, stirring constantly, until thickened. Add sugar, prepared mustard, and salt and mix well. beat egg yolk and add a little of the sauce to it, mixing well. Return to sauce and stir in thoroughly. Add dill, ham, and eggs and stir gently to mix. Pour into greased 2 quart casserole, cover and bake in 400ºF. oven until piping hot, about 20 minutes. Serves 4
