Ham Steak in Madeira


 

Ham Steak in Madeira

2 pounds of ham steak
1 medium onion, chopped
1 tomato, peeled and chopped
1 cup of Madeira wine
1 clove
1 bay leaf
1 cup of beef stock
2 tablespoons of butter
2 tablespoons of flour



Place ham in a shallow 12"x24" casserole with onion, tomato, wine, clove, bay leaf, and stock. Bake in 375ºF. oven 30 - 40 minutes or until tender. Remove ham and keep warm. Discard clove and bay leaf. Mix butter and flour and add, little by little, to the gravy, stirring until thickened. Extra stock and or wine may be added if desired. Return ham to gravy. Serves 6 - 8
