Kraut and Frankfurter Tahitian


 

Kraut and Frankfurter Tahitian

1/2 cup of chopped onion
1/2 cup of green pepper strips
2 tablespoons of vegetable oil
2 tablespoons of flour
one 1 pound 4 1/2 ounce can of pineapple slices, drained, reserving 1 cup of syrup
1/2 cup of water
1 beef bouillon cube
1/4 cup of firmly packed brown sugar
1 teaspoon of salt
1/2 teaspoon of ground black pepper
1 teaspoon of soy sauce
1 teaspoon of ground ginger
3 1/4 cups of drained sauerkraut
2 pounds of frankfurters, cut into 2 inch pieces



Sauté the onion and green pepper in oil until crisp tender. Mix in flour. Gradually blend in reserved pineapple syrup and water. Stir in beef cube, sugar, salt, pepper, soy sauce, and ginger. Bring to a boil, stirring constantly. Arrange layers of kraut and halved pineapple slices around sides of a 3 - 4 quart casserole. Pile frankfurters in center. Pour sauce over all. Bake in 350ºF. oven for 30 minutes. Serves 6 - 8
