1 medium eggplant 12 saltine crackers 1 egg 1 cup of grated cheese 1 cup of milk 3 tablespoons of margarine
Cook diced eggplant in water until transparent or done. Drain and add broken crackers, beaten egg, cheese, milk and melted margarine. Bake in 350ºF. preheated oven 30 minutes. Top with grated cheese or cracker crumbs.
