Low Calorie Good Eyes Casserole

Low Calorie Good Eyes Casserole

Categories: Low Calorie, Casserole, Carrots,

1 pound of carrots, peeled and grated
1 1/2 cup of chopped onion
1/4 cup of sour cream
1/2 cup of  plain low-fat yogurt
1 cup of corn bread dressing mix
2 tablespoons  of Molly Mcbutter and water
one 8  ounce can of cream of mushroom soup
1 teaspoon of lemon juice
Pepper to taste
Pinch of sugar (1 tsp.)
4 egg whites, beaten
Paprika

Mix all ingredients except paprika, adding egg whites last. Pour into casserole dish (sprayed with cooking spray) and sprinkle with paprika. Bake at 350ºF.  for 50 minutes. Serves 8.
