3 cups of cooked, mashed potatoes 1 egg, separated 1 cup of American cheese 1/4 cup of green pepper, chopped 2 green onions 1/2 teaspoon of celery salt 1 egg whites Vegetable cooking spray 1/2 teaspoon of paprika
Combine mashed potato and egg yolk. Stir in cheese, green pepper, green onions and celery salt. Beat egg whites (at room temperature) until forms soft peaks. Gently fold into potato mixture. Spoon mixture into a 2 quart casserole dish coated with vegetable cooking spray. Sprinkle paprika over top. Bake at 375ºF. for 25-30 minutes. 8 servings.
