3 tomatoes, cut up 2 cups of white wine 3/4 pound of mushrooms freshly ground pepper to taste 1 bay leaf 1 tablespoon of olive oil salt to taste
Place tomatoes in a 1 1/2 - 2 quart casserole and add wine. Cook over low heat 20 - 25 minutes. Strain. Add the mushrooms, pepper, bay leaf, and olive oil. Cook for 30 minutes over low heat. Adjust seasonings with salt and pepper. Serve cold. Serves 4 |
