4 strips of bacon, cut up fine 4 loin pork chops, 1 inch thick 1 medium onion, chopped 1 clove garlic, mashed one 1 pound can of sauerkraut, drained 1 bottle of beer 1 bay leaf 1 teaspoon of brown sugar salt and freshly ground black pepper to taste 1 tablespoon of cornstarch 2 tablespoons of water
In a 3 quart casserole, brown the bacon. Remove and reserve. Fry chops in the fat until brown. Remove them and fry the onion and garlic until golden. Return the chops and browned bacon to the casserole and add sauerkraut, beer, bay leaf and sugar. Cover and bake in 350ºF. oven for 1 hour or until chops are tender. Season to taste. Mix cornstarch with water and stir into the casserole to thicken the sauce. Serves 4
