Potato & Anchovy Casserole

 

Potato & Anchovy Casserole

3 medium potatoes
2 medium onions
3 tablespoons of butter
1 tin of flat anchovy fillets, drained
3 eggs
1 1/2 cups of light cream
freshly ground pepper
1/2 cup of grated Swiss cheese




Peel the potatoes and slice them very thin. Peel and mince the onions. Sauté onions in butter until limp, but not brown. In a buttered 1 1/2 quart casserole place half of the potatoes. Cover with half of the onions. Place anchovy fillets on top of this. Cover with remaining onions, then remaining potatoes. Beat eggs and cream together and season with pepper. Pour over potatoes. Sprinkle on the cheese. Bake in 375ºF. oven 30 - 35 minutes, until nicely browned. Serves 4 - 6
