1/4 cup of olive oil 1 clove garlic, mashed 1 teaspoon of chopped fresh basil or 1/2 teaspoon of dried 2 medium onions, chopped 2 green peppers, chopped 1 small eggplant, sliced 3 medium zucchini, sliced 3 medium tomatoes, sliced salt
Place olive oil in bottom of a 2 1/2 - 3 quart casserole. Add garlic and basil. Put in a layer of onion, one of green pepper, one of eggplant, one of zucchini, and one of tomatoes, sprinkling with salt as you layer. When all vegetables are in, cover the casserole and bake in 300ºF. oven for 30 minutes. Remove cover and bake for 30 minutes longer. Serves 6 - 8 |
