4 hard cooked eggs 1 tablespoon of chopped onion 1 teaspoon of dry mustard salt and freshly ground pepper a dash of paprika mayonnaise 1 pound of shrimp, cooked and cleaned 3 tablespoons of butter 2 tablespoons of flour 1 1/2 cups of milk Buttered bread crumbs
Halve the eggs lengthwise. Remove yolks and press through a sieve. Add onion, seasonings and just enough mayonnaise to blend. Put back into whites. Arrange in the bottom of a buttered 1 1/2 quart casserole. Lay shrimp on top. Melt the butter, stir in flour smoothly. Add milk and cook , stirring constantly until thickened. Pour over eggs and shrimp. Do not stir. Top with buttered crumbs. Bake in 375ºF. oven for 20 minutes or until casserole is bubbling and the top is brown. Serves 4 |
