Flour, seasoned with salt and pepper two 2 1/2 pound broiler fryers, cut into serving pieces 1/4 cup of butter 2 cloves garlic, minced 1 1/2 cups of rice 2 pints of clam juice 4 tomatoes, quartered 2 green peppers, coarsely chopped 1 pound of shrimp, shelled and cleaned two 7 1/2 ounce cans of chopped clams 1/2 teaspoon of saffron
Put flour, seasoned with salt and pepper, into a paper bag. Shake each piece of chicken in this. Melt butter in a 5 - 6 quart casserole and fry chicken pieces to a delicate golden brown. Remove pieces as they are browned. Fry the garlic and rice for 2 - 3 minutes, stirring constantly with a fork so that they do not burn. Pour in clam juice and add chicken pieces, tomatoes, green peppers, and shrimp. Simmer for 20 - 30 minutes or until rice is done and has absorbed the clam juice. Add the chopped clams and saffron and heat for 5 minutes longer. Serves 8 |
