Spinach Artichoke Casserole
one 6 ounce jar of marinated artichoke hearts, drained
two 10 ounce packages of frozen chopped spinach, cooked and squeezed
one 8 ounce package of cream cheese, softened
2 tablespoons of butter or margarine, softened
1/4 cup of milk
1/2 teaspoon of freshly ground pepper
1/4 cup ( 1 ounce) of grated Parmesan cheese
Put artichoke hearts into a 1 1/2 quart casserole.
Spread the spinach over artichoke hearts.
Beat together the cream cheese and butter. Gradually add milk, beating
until smooth. Spread over spinach.
Sprinkle pepper and Parmesan cheese over top.
Bake, covered at 350ºF. for 30 minutes. Remove cover. Garnish with
pimento strips and hard cooked egg slices. Bake an additional 10 minutes
or until heated through. 6 servings |
