4 veal shank bones 2 tablespoons of flour 2 tablespoons of butter 1 medium onion, chopped 1 1/4 cups of chopped carrots 1 tomato, chopped 2 tablespoons of oil salt and pepper to taste 1/4 teaspoon of thyme 1 bay leaf 1 cup of white wine |

Be sure to get a shank bone that's well covered with meat. Roll them in flour and brown in the butter. Add onion, carrots, tomato, oil, salt, pepper, thyme, and bay leaf. Pour in the wine and cook, covered, over low heat for 1 hour, or until meat is tender. Serve with pasta. Serves 4
