Apple Frankfurter Casserole

2 1/2 cups of sliced peeled eating apples
3 large sweet potatoes, boiled, peeled and sliced
1 pound of frankfurters, split lengthwise and halved
1/4 cup of firmly packed light brown sugar
1/8 teaspoon of ground cinnamon
1/4 teaspoon o salt
1 teaspoon of fresh lemon juice
1/2 cup of buttered soft bread crumbs



In shallow greased casserole, alternate layers of apple, sweet potato, and frankfurter, until half are used. Mix next 3 ingredients and sprinkle half on contents of casserole. Add remaining apples, potatoes and franks. Sprinkle with remaining sugar mixture and lemon juice. Top with crumbs. Cover and bake in preheated moderate oven (375ºF.) for 45 minutes. Uncover and bake for 10 minutes. Makes 6 servings
