5 slices of stale bread, diced 1/2 cup of shredded cheddar cheese 1 1/2 onion, grated 5 eggs 1/2 teaspoon of salt 1/2 teaspoon of dry mustard a dash of pepper 1/8 teaspoon of celery salt a dash of cayenne
In a casserole or loaf pan, arrange the bread, cheese and onion in layers, starting and ending with the bread cubes. Beat the eggs in a bowl, add the milk and seasonings, and blend well. Pour this over the bread cheese layers in the casserole. Let it stand overnight in the refrigerator or for at least 1 hour. Preheat the oven to 350ºF. and bake for 45 - 60 minutes or until a toothpick or straw comes out clean when inserted in the center. Variation: Tuna or Salmon Casserole. Instead of the cheese (or with the cheese), use 1/2 to 1 cup of flaked tuna or salmon, and 1/4 cup of chopped green peppers. Serves 6
