| Chicken & Broccoli Rice Casserole
1/2 cup of chopped onions 1/2 cup of sliced mushrooms 1 tablespoon of butter 2 cups of hot cooked rice 2 cups of cubed chicken breast 2 cups of chopped fresh broccoli, steamed or one 10 ounce package of frozen broccoli, thawed one 10 3/4 ounce can of cream of mushroom soup, condensed 1/2 cup (2 ounces) of shredded cheddar cheese |

Simmer onions and mushrooms in large skillet with butter until tender. Stir in rice, chicken, broccoli and soup. Pour into buttered 1 1/2 quart baking dish. top with cheese. Bake at 350ºF. for 20 - 25 minutes. Serves 6 |
