| Chicken In a Shell
6 baking potatoes 2 tablespoons of butter or margarine one 10 3/4 ounce can of cream of chicken soup 1 cup of parmesan cheese, grated 3 tablespoons of fresh parsley, chopped 1 1/2 cups of cooked chicken, cubed |

Bake potatoes until done, cut potatoes in half lengthwise, scoop out insides and reserve, leaving a thin shell. Mash the potatoes with butter, add 1/2 cup of cheese and remaining ingredients. Spoon into potato shells, sprinkle with remaining cheese. Arrange potatoes in shallow 3 quart baking dish. Bake at 375ºF. for 15 minutes. Serves 6 |
