Curried Lamb Casserole 2

1 slice of white bread, crusts removed
1/2 cup of milk
1 tablespoon of peanut oil or butter
1 medium onion, chopped
2 cups of diced cooked lamb or raw ground lamb
2 eggs
1 tablespoon of curry powder
1/4 teaspoon of ginger
1/4 teaspoon of thyme
1/2 teaspoon of crushed red peppers
salt and pepper to taste
1 tablespoon of lemon juice
1/4 cup of raisins
1/4 cup of diced apple
8 almonds or walnuts, chopped fine
1 bay leaf

Soak the bread in the milk, squeeze out the milk and reserve. Heat the oil or butter and brown the onion. Mix the lamb, 1 egg, bread, onion and the reserved milk. Beat the other egg with the milk and add half to the lamb mixture. Place in a greased casserole and pour the other half of the egg milk mixture over it. Lay the bay leaf on top and bake in a preheated oven at 300ºF. for 40 - 45 minutes. If raw lamb is used, bake for 1 1/4 hours. However, the cooked lamb gives a better texture to the dish. Serves 4
