Green Tomato Casserole 2

4 medium size green tomatoes, cut into 1/4 inch slices
1 teaspoon of sugar
1 teaspoon of salt
1/2 teaspoon of pepper
2 cups of soft breadcrumbs
1 cup (4 ounces) of shredded Sharp Cheddar cheese
1 tablespoon of butter or margarine, softened




Arrange one layer of tomato slices in the bottom of a lightly greased 1 1/2 quart casserole. Combine sugar, salt, and pepper; mix well. Sprinkle tomatoes with about one third each of sugar mixture, breadcrumbs, and cheese. Repeat layers, omitting cheese from top layer.

Dot butter over top of casserole. Cover and bake at 400ºF. for 1 hour. Add remaining cheese. Bake, uncovered, 5 minutes or until cheese melts. Yield: 4 to 6 servings
