Island Scallop Casserole

2 pounds of scallops
1 cup of buttered crumbs
1 teaspoon of salt
1/2 cup of minced green pepper
1/2 cup o finely chopped celery
1 cup of light cream
2 tablespoons of grated Parmesan cheese




Wash and drain the scallops. Place in a saucepan and cover with cold water. Bring to boiling point over low heat, then drain. Place 1/3 of the crumbs in a greased casserole and add half the scallops, salt, green pepper and celery. Add the cream. Mix remaining crumbs with cheese and sprinkle over casserole. Bake in 350ºF. oven for 30 minutes. Makes 6 servings
