1 pound of red beans 1 pound of smoked sausage, cut into bite size pieces 1 - 2 stalks celery, chopped 1 onion, chopped 1 garlic clove, crushed 1 teaspoon of sugar 1 teaspoon of salt 1 bay leaf 8 - 10 cups of water 1 1/2 cups of uncooked rice (white, brown or wild)
Rinse the beans. In a large pot combine the beans, sausage, celery, onion, garlic, sugar, salt, bay leaf and 8 - 10 cups of water. Bring to a boil and stir frequently so mixture does not stick. Reduce heat to low and cook, covered, until beans are tender, 1 1/2 - 2 hours. Add uncooked rice and cook until tender, about 15 - 20 minutes. Serves 6 |
