Mexican Dinner Pronto

 

Mexican Dinner Pronto

2 tablespoons of vegetable oil
1 onion, chopped
one 15 ounce can of tamales in chili gravy
one 15 ounce can of chili without beans
one 15 ounce can of chili with beans
1/4 teaspoon of oregano
1/2 cup of Monterey Jack cheese, shredded




In a skillet heat oil, sauté onion until tender, transfer to Oven Proof Baking Dish. Unwrap tamales, arrange 1/2 over onions. Add the 2 cans of chili, sprinkle with oregano, top with remaining tamales. Bake at 350ºF. for 30 minutes or until bubbling hot. Remove from oven, sprinkle with cheese, bake for 15 minutes longer, or until cheese has melted. Serves 4
