1 pound of lean stewing beef, cut into 1" cubes (lamb or pork can be used) salt and pepper 1/3 cup of vegetable oil 2 medium onions, slices 2 teaspoons of honey 1/2 teaspoon of ground cinnamon 1/2 teaspoon of ground nutmeg 1/2 teaspoon of parsley 1/2 teaspoon of basil 8 ounce can of tomatoes 4 slices of wheat or white bread, buttered & quartered
Lightly salt and pepper beef. In a skillet over moderate heat, fry beef cubes until browned. Transfer meat to ovenproof dish. In the same skillet, fry onions for 5 minutes until soft, but not browned. Stir in remaining ingredients, except bread, bring to a boil. Pour over meat, cover. Bake in a 350ºF. oven for 1 hour. Taste and adjust seasonings, if necessary. Arrange bread slices neatly on top, return to oven for 30 minutes or until the bread is golden and crisp. |
