Pinto Bean Casserole

 

Pinto Bean Casserole

1 to 1 1/2 pounds of ground beef
1/2 cup of chopped onion
1/2 cup of chopped green pepper
1 clove garlic, minced
one 15 ounce can of tomato sauce
2 teaspoons of chili powder
1 teaspoon of salt
1 cup of cooked rice
one 15 ounce can of pinto beans
1 1/2 cups of grated Cheddar cheese




Brown the beef, onion, green pepper, and garlic. Blend in tomato sauce, chili powder, and salt. In a greased 2 quart casserole dish, layer part of meat sauce, beans, half of cheese and remainder of meat sauce. Top with other half of cheese. Bake at 350ºF.  for 15 - 20 minutes. Let stand a few minutes before serving. Rolls or garlic toast and salad with this casserole make a complete meal.  Serves 4 - 6
