Pizza Rice Pie

 

Pizza Rice Pie

2 2/3 cups of cooked rice
1/3 cup of  minced onion
2 eggs, beaten
2 tablespoons of melted butter or margarine
one 8 ounce can of tomato sauce with cheese
1/4 teaspoon of oregano
1/4 teaspoon of basil
1 cup of shredded mozzarella cheese
one 4 1/2 ounce package of pepperoni or salami
1/2 cup of sliced stuffed olives




Mix together rice, onion, eggs and melted butter. Line a 12 inch pizza pan with rice mixture and bake for 12 minutes at 350ºF.  or until set. Spread tomato sauce with cheese over pizza crust. Top with pepperoni and olives. Bake at 350 for 20 - 25 minutes. After removing from oven, allow to stand a few minutes before serving. Serves 4 - 5
