| | Soy Bean Casserole 2
2 cups of soy beans vegetable salt to taste a few peppercorns 1 teaspoon of dry mustard 1 small onion, chopped 2 tablespoons of molasses 2 tablespoons of minced parsley
Cover the beans with water and soak overnight. Drain, cover with fresh water, heat to the boiling point and simmer until tender, about 2 hours. They will double in bulk. Rub a casserole dish with butter. Mix the beans with all other ingredients. Set oven on 250ºF. and let bake at least 8 hours. |
