Spinach Casserole 3

2 pounds of fresh or two 10 ounce packages of frozen spinach
1/2 pound of bacon
1 cup of sour cream
1 cup of grated sharp cheese
1 onion
1/2 pound of mushrooms
1/4 teaspoon of marjoram
1/4 cup of parmesan
salt and pepper




Cook the spinach in salted water and drain well. Slice the onion and fry with the bacon until both are soft but the bacon isn't crisp. Cut the bacon into 1/2 inch slices. Slice the mushrooms. Mix all ingredients, except the parmesan and place in a buttered baking dish. Sprinkle the top with parmesan and bake in an oven preheated to 350ºF. for 30 minutes.

Use broccoli or cauliflower instead of spinach. Add other vegetables like celery, green pepper or bean sprouts if you have them. Use cream instead of sour cream but beat in 2 eggs to thicken.
