| | Spinach Pie
1 tablespoon of olive oil
1 pound of fresh spinach, washed, drained and stems removed
1 medium potato, cooked and mashed
2 eggs, beaten
1/4 cup of cottage cheese
1/4 cup of grated Romano cheese
salt
Preheat oven to 350ºF. Grease 8 inch round cake pan with olive oil. Tear spinach into bite sized pieces. Combine spinach, potato, eggs, cottage cheese and Romano cheese in a large bowl. Spoon mixture into prepared pan. Bake 15 to 20 minutes or until set. Season to taste with salt. Makes 6 servings |
