Chinese Recipes

 

Lemon Chicken 2

1/2 cup of butter
two 2 1/2 pound chicken, split in half
1 clove garlic, peeled and mashed
1 1/2 teaspoons of salt
1/4 cup of salad oil
1/2 cup of lemon juice
2 tablespoons of minced onion
1/2 teaspoon of pepper
1/2 teaspoon of thyme



Melt the butter in heavy skillet with lid. Add chicken and brown on all sides. Combine the garlic, salt, oil, lemon juice, onion, pepper and thyme, pour over chicken. Cover pan tightly and cook over low heat for 40 minutes or until chicken is tender. Serves 6 to 8
