2 cups of golden raisins 2 cups of chopped pecans 4 cups of sifted flour 2 teaspoons of cinnamon 2 teaspoons of cloves 2 teaspoons of allspice 2 teaspoons of baking soda 2 2/3 cup of sugar* 1/2 cup of hot water 1 cup of butter 2 eggs 2 cups of applesauce 1/4 cup of apricot brandy
*3 cups if applesauce is unsweetened. Cover raisins with warm water for a few minutes, then drain, Sift flour with spices and soda. Dredge raisins and nuts with some of the flour mix. Beat butter and sugar together until creamy. Add eggs and beat well. Add applesauce and beat. Blend in flour mixture, nuts, and raisins, hot water and brandy. Beat well. Pour into either a large tube pan or 2 loaf pans that have been greased and floured. Bake about 1 hour at 350ºF. The loaf pans will take less time. when cool, frost with cream cheese frosting, flavored with brandy instead of vanilla.
