Applesauce Breakfast Cake

1 cup of plain flour
1/2 teaspoon of baking powder
1 egg
1/4 cup of cooking oil
1/3 cup of sugar
1/4 teaspoon of baking soda
1/2 cup of applesauce
1/2 teaspoon of vanilla

TOPPING:
1/4 cup of packed brown sugar
1 tablespoon of margarine
1/2 teaspoon of cinnamon
1/4 cup of chopped walnuts or pecans



Mix together the brown sugar, margarine and cinnamon from the topping ingredients until crumbly. Add nuts. Stir to mix. Set aside. Mix flour, sugar, baking powder, baking soda and salt. Add well beaten egg, applesauce, oil and vanilla, mix well. Pour batter into well greased 8 x 8 x 2 inch pan. Sprinkle Topping over batter. Bake for 20-25 minutes. Delicious for breakfast, snacks, or dessert. 

Applesauce Breakfast Cake

1/4 teaspoon of baking soda
Dash salt
1/2 cup of applesauce
1/4 cup of vegetable oil
1/2 teaspoon of vanilla

Mix together and put in 8 x 8 inch pan.

TOPPING:
1/4 cup of brown sugar
1 tablespoon of margarine
1/2 teaspoon of cinnamon
1/4 cup of chopped walnuts

Sprinkle the topping over the batter. Bake at 350ºF. for 20-25 minutes.
Applesauce Almond Breakfast Cake

1/2 cup of margarine
1/3 cup of sugar
1 egg
1 1/2 cup of all-purpose flour
1 cup of Quaker Oats (quick or old fashioned), uncooked
2 1/2 teaspoons of baking powder
1 teaspoon of cinnamon
1/4 teaspoon of salt (optional)
1 cup of applesauce
1/3 cup of water
1/2 cup of sliced almonds


Heat oven to 350ºF. Grease 9 inch square baking pan. Beat together margarine and sugar; blend in egg. Add combined flour, oats, baking powder, cinnamon, salt, applesauce, and water; mix well. Fold in almonds; spread evenly into prepared pan. Bake 40 to 45 minutes or until golden brown. Cool completely. Sprinkle with powdered sugar, if desired. Store loosely covered. 9 servings.
