Lemon Applesauce Cake

1 cup of Stone Buhr 7 Grain cereal, uncooked
1 cup of unsweetened applesauce
1 cup of whole wheat flour
1/2 cup of oat bran
1 tablespoon of baking powder
1 teaspoon of cinnamon
1 teaspoon of lemon rind, grated
1/2 cup of unfiltered apple juice
1 envelope of prepared Butter Buds
2 egg whites
1/2 cup of raisins
1/2 cup of chopped nuts



One hour before starting, combine cereal and applesauce. Mix, cover, and set aside at least 1 hour or overnight. Preheat oven to 350ºF. In a medium bowl, combine apple juice, Butter Buds, egg whites, raisins, and nuts; mix well. Add in dry ingredients and applesauce mixture, mixing well. Pour into 8 or 9 inch cake pan sprayed with non-stick. Bake at 350ºF. for 30 minutes. Cool before slicing. Serves 14.
