Boil the sugar and water to 240ºF. on candy thermometer or until a small quantity dropped in cold water forms a medium firm ball. Beat egg whites stiff. Gradually add syrup to egg whites, beating constantly until frosting holds its shape. Add salt and vanilla. Makes enough to fill and frost one 8 inch layer cake. |
