Busy Day Cake

1/3 cup of shortening
1 3/4 cup of flour
3/4 cup of sugar
2 1/2 teaspoon of baking powder
1/2 teaspoon of salt
1 egg
3/4 cup of  milk
1 1/2 teaspoon of vanilla

Combine flour, baking powder and salt. In another mixing bowl, mix together the remaining ingredients. Add to dry ingredients and mix well. Then bake in a 9 x 13 inch cake pan or dish at 370ºF. for 25 minutes. 




Busy Day Cake 2

1/2 cup of cocoa powder
1/2 cup of  boiling water
2/3 cup of shortening or canola oil
1 3/4 cup of sugar
1 teaspoon of vanilla
2 eggs
2 1/4 cups of  flour
1 1/2 teaspoon of baking soda
1/2 teaspoon of  salt
1 1/2 cup of  buttermilk or sour milk*

Cream shortening, sugar and vanilla. Add eggs and beat well. Combine flour, baking soda and salt. Add alternately with milk to creamed mixture. Blend in cocoa mixture. May bake in 2 (9 inch) pans or one 9 x 13 inch at 350ºF. 35 to 40 minutes. Cool and frost as desired; OR to keep it light, just sprinkle with sugar. 

Busy Day White Cake 3

2/3 cup of shortening
3 cups of  flour
1 1/2 cup of sugar
2 cups of milk
2 eggs
5 teaspoons of baking powder
1 teaspoon of  vanilla
1/2 teaspoon of salt

Put all ingredients in a bowl and beat with mixer until blended. Beat 2 minutes more. Pour into a greased 9x11 pan. Sprinkle chocolate chips and chopped nuts on top if you don't want to frost the cake. Bake at 375ºF. for 30 minutes. 

Busy Day Chocolate Cherry Cake 4

1/4 cup of oil
1 package of chocolate cake mix
1/2 cup of water
2 eggs
1 can of cherry pie filling
1 teaspoon of  almond extract

Combine all ingredients by hand. Add pie filling and mix well. Bake 45 minutes at 350ºF. 

GLAZE:

5 tablespoons of margarine
1 cup of powdered sugar
1/2 cup of  milk
1 cup of chocolate chips

Mix butter, sugar and milk in saucepan. Bring to boil. Stir constantly. Boil 2 minutes. Remove from heat and add chocolate chips, stir until smooth. Spread on cake.
