Carolyn's Carrot Cake

 

Carolyn's Carrot Cake

4 eggs
1/2 cup of salad oil
2 cups of sugar
2 cups of flour
1 teaspoon of salt
2 teaspoons of cinnamon
2 teaspoons of baking soda
2 teaspoons of baking powder
1 cup of chopped pecans
2 or 3 cups of grated carrots

Beat eggs well, add salad  oil and sugar and salt. Sift dry ingredients together. Add nuts to dry ingredients and then stir dry mixture with egg mixture. Add carrots gradually, mixing thoroughly as you do so. Bake at 350ºF. in greased and floured tube pan. Frost with cream cheese icing.
