Carrot Apple Cake w/Cream Cheese Frosting

1 1/2 cup of sugar
1 cup of Crisco oil
3 eggs
1 teaspoon of vanilla
2 cups of shredded carrots
1 cup of coarsely shredded cut apples
3/4 cup of all-purpose flour
2 teaspoons of cinnamon
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt

Cream Cheese Frosting:

1 package of cream cheese, room temp.
1/3 cup of margarine
1 teaspoon of vanilla
2 cups of powdered sugar

Mix together sugar, shortening, eggs and vanilla. Add apples, carrots and nuts. Add flour, cinnamon, baking powder, baking soda and salt. Pour into greased and floured pan. Bake 30 to 40 minutes at 350ºF. Cool. Combine ingredients for frosting and spread over cake after cake has cooled.
